Baked Salmon with Vegetables

Ingredients

  • Salmon fillet300 g (≈2 steaks)
  • Broccoli200 g (≈½ head)
  • Zucchini150 g (≈½ pc)
  • Cherry tomatoes150 g (≈10 pcs)
  • Olive oil2 tbsp (30 ml)
  • Lemon60 g (≈1 pc)

Method

  1. (5 min) Oven 200°C. Spread broccoli and zucchini on a tray.
  2. (2 min) Drizzle with oil, season; bake 10 min.
  3. (3 min) Add salmon, cherry tomatoes, lemon slices and herbs.
  4. (15 min) Bake 12–15 min until the fish is done.
  5. Finish with a squeeze of lemon and serve.
