Baked Salmon with Vegetables

Ingredients
- Salmon fillet300 g (≈2 steaks)
- Broccoli200 g (≈½ head)
- Zucchini150 g (≈½ pc)
- Cherry tomatoes150 g (≈10 pcs)
- Olive oil2 tbsp (30 ml)
- Lemon60 g (≈1 pc)
Method
- (5 min) Oven 200°C. Spread broccoli and zucchini on a tray.
- (2 min) Drizzle with oil, season; bake 10 min.
- (3 min) Add salmon, cherry tomatoes, lemon slices and herbs.
- (15 min) Bake 12–15 min until the fish is done.
- Finish with a squeeze of lemon and serve.
