Ingredients

  • Beets300 g (≈2 pcs)
  • Feta cheese80 g (≈¼ pack)
  • Walnuts40 g (≈⅓ cup)
  • Arugula / salad greens60 g (≈2 handfuls)
  • Balsamic vinegar check the label
    No malt vinegar
    1 tbsp (15 ml)

Method

  1. (3 min) Heat the oven to 200 °C, wrap the beets in foil.
  2. (35 min) Roast until soft, cool, and dice.
  3. (2 min) Toast and chop the nuts.
  4. (2 min) Mix the oil, balsamic, and honey.
  5. Arrange the beets, feta, and nuts over the leaves, drizzle with dressing.
