Ingredients

  • Buckwheat groats150 g (≈¾ cup)
  • Button mushrooms250 g (≈10 pcs)
  • Onion80 g (≈1 pc)
  • Water or GF broth check the label500 ml (≈2 cups)
  • Hard cheese check the label40 g (≈a handful)

Method

  1. (5 min) Chop the onion and mushrooms, mince the garlic.
  2. (7 min) Sauté the onion and mushrooms until golden.
  3. (3 min) Add the buckwheat, toast for 1 min.
  4. (13 min) Add the broth a ladle at a time until the grain is tender.
  5. Stir in the cheese and thyme.
