Ingredients
- Chicken breast300 g (≈2 fillets)
- Quinoa120 g (≈¾ cup)
- Cherry tomatoes150 g (≈10–12 pcs)
- Cucumber100 g (≈½ pc)
- Salad leaves80 g (≈2 handfuls)
- Olive oil2 tbsp (30 ml)
- Paprika check the label1 tsp (3 g)
Method
- (15 min) Cook quinoa in salted water, rest 5 min.
- (2 min) Slice chicken, season with paprika and pepper.
- (8 min) Pan-fry chicken in oil until cooked through.
- (3 min) Slice tomatoes and cucumber.
- Assemble the bowl, dress with oil and lemon juice.
