Ingredients

  • Shredded coconut200 g (≈2.5 cups)
  • Egg whitesfrom 2 eggs
  • Sugar60 g (≈3 tbsp)
  • Vanilla extract check the label1 tsp (5 ml)

Method

  1. (3 min) Heat the oven to 170 °C, line a baking sheet with paper.
  2. (4 min) Whisk the egg whites with sugar, fold in the coconut and vanilla.
  3. (3 min) Spoon into small mounds.
  4. (18 min) Bake until the edges are golden, then cool.
