Ingredients
- Shredded coconut200 g (≈2.5 cups)
- Egg whitesfrom 2 eggs
- Sugar60 g (≈3 tbsp)
- Vanilla extract check the label1 tsp (5 ml)
Method
- (3 min) Heat the oven to 170 °C, line a baking sheet with paper.
- (4 min) Whisk the egg whites with sugar, fold in the coconut and vanilla.
- (3 min) Spoon into small mounds.
- (18 min) Bake until the edges are golden, then cool.
