Ingredients

  • Eggplant250 g (≈1 pc)
  • Zucchini200 g (≈1 pc)
  • Bell pepper120 g (≈1 pc)
  • Chickpeas240 g (≈1 can)
  • Arugula / salad greens60 g (≈2 handfuls)

Method

  1. (5 min) Heat the oven to 210 °C. Dice the vegetables onto a baking sheet.
  2. (3 min) Drizzle with oil, season with salt, add the chickpeas.
  3. (22 min) Roast until golden, stirring once.
  4. (2 min) Mix the oil, lemon, and garlic.
  5. Arrange the warm vegetables over arugula, drizzle with dressing.
