Ingredients
- Eggplant250 g (≈1 pc)
- Zucchini200 g (≈1 pc)
- Bell pepper120 g (≈1 pc)
- Chickpeas240 g (≈1 can)
- Arugula / salad greens60 g (≈2 handfuls)
Method
- (5 min) Heat the oven to 210 °C. Dice the vegetables onto a baking sheet.
- (3 min) Drizzle with oil, season with salt, add the chickpeas.
- (22 min) Roast until golden, stirring once.
- (2 min) Mix the oil, lemon, and garlic.
- Arrange the warm vegetables over arugula, drizzle with dressing.
