- Eggs4 pcs
- Canned tomatoes check the labelNo gluten-containing additives400 g (≈1 can)
- Feta cheese100 g (≈⅓ pack)
- Onion80 g (≈1 pc)
- Bell pepper120 g (≈1 pc)
- Ground paprika check the labelPure spice, no fillers1 tsp (3 g)
- Olive oil1 tbsp (15 ml)
- Parsley10 g (≈small bunch)
Method
- (5 min) Dice onion and pepper, mince garlic, heat the oil.
- (7 min) Sauté onion and pepper until soft, add spices for 1 min.
- (5 min) Add tomatoes, season, simmer until thickened.
- (8 min) Make wells, crack in the eggs, cover until whites set.
- Crumble feta, sprinkle parsley. Serve immediately.
Tip: Serve with gluten-free bread and a separate knife.
